Remove the pork from the marinade, scraping the onion off the pork and back into the marinade. Pat the roast dry with paper towels. Pour the marinade into a slow cooker and add the Liquid Smoke. Place a collapsible vegetable steamer or a slow cooker meat rack in the slow cooker. 3. In a small bowl, combine the sugar, salt, paprika, and pepper. Rub the pork roast with the spice mixture, and place on steamer or rack. 4. Cover and slow cook until the pork is very tender, 7 to 8 hours on Low. Transfer the pork to a cutting board and cover with foil to keep warm. 5. Skim the fat from the surface of the cooking liquid. Stir in the ketchup, and pour into a bowl. Using 2 forks, pull the pork apart into shreds. Serve the pork on heated buns, passing the sauce on the side to spoon over the sandwiches. Makes 8 sandwiches."

Add shallots and saute briefly, 3-4 minutes. Add red pepper, yellow pepper, habanero and garlic. Saute 3-4 minutes. Deglaze pan with sherry. Allow sherry to evaporate. Add honey, lime juice and Worcestershire to pan and allow vegetables to caramelize slightly, about 3-4 minutes. Remove from heat and let cool. In a large mixing bowl, combine rock crab, chives, cilantro, mustard, mayonnaise, eggs, flour, salt, pepper and cayenne. When the vegetables have cooled, add them to the bowl and mix thoroughly. CRUST: 2-1/2 cups crushed oatmeal-raisin cookies. 1/2 cup (1 stick) unsalted butter, melted. FILLING: 4-8-ounce packages cream cheese at room temperature. 1/2 cup sugar. 2 Tbls. all purpose flour. 5 large eggs at room temperature. 1/2 cup sour cream. 2 tsp. finely chopped orange zest. 1/2 tsp salt. 1/2 Tbls. vanilla extract. 1/3 cup Grand Marnier liqueur. Garnish: white and dark chocolate curls or mandarin orange segemants. 1. Make the crust. Combine cookie crumbs and butter. Mix thoroughly and press in an even layer on the bottom of a 10-inch springform pan. Refrigerate for 30 minutes. 2. Preheat oven to 325. 3. Make the filling. Using an electric mixer, cream together the cream cheese and sugar. Mix in the flour. Add eggs one at a time, beating well after addition. Scrape down the sides of the bowl. 4. Add sour cream, orange zest, salt, vanilla, and liqueur and mix thoroughly. Pour mixture over crust in the pan. 5. Line a large baking sheet with aluminum foil. Place springform pan on baking sheet and place in the oven. Bake for 70 minutes. 6. Turn off oven. Let cake cool in the oven for 1 hour (do not open oven door). Remove from oven and let cool at room tempraure for 2 to 3 hours. Refrigerate for 8 hours or overnight. 7. Remove sides of pan and transfer cheesecake to a serving platter. Stir and saute sauce mixture for 10 minutes on low/medium heat, uncovered. Return chops to the center area of the pan and spoon sauce mixture over the chops. It is important that you turn the chops 3-4 times during the whole process, keeping them heavily coated with sauce. Reduce the heat to low and cover. Simmer for 1 hour stirring occasionally. Remove chops and add the rice, wine, and the spinach to the sauce, mixing together well. Return the chops and simmer for another hour until meat is very tender. You can substitute the tomatoes for 1 can of diced tomatoes and you can substitute the spinach for 1 can of french cut green beans. The wine is optional. I used marsala cooking wine and it tasted great."

Heat a heavy skillet to high temperature. Sear steak quickly (20 sec. or so) on both sides to seal in juices then remove to grill for finishing to desired doneness. While steak is cooking on the grill, deglaze pan with 1/4 to 1/3 cup wine. (If there is little or no drippings from the steak add a little butter to the hot pan and brown but do not burn it, then deglaze). Add cracked black pepper, green peppercorns and 1/4 to 1/3 cup heavy cream to pan. Cook over medium heat, stirring constantly until liquid is reduced by half. By this time the steak should be done. Place steak on serving dish and pour pepper sauce over the steak or serve the sauce in a small ramekin on the side. This recipe yields about 1/4 cup of sauce or enough for two eight ounce steaks."

After filling the pouch with the mixture, dip into the egg batter allowing some of the batter to be absorbed by the bread.
